Party Pizzas

I'm preparing for our ranch roundup and branding in two weeks, so I'm making a few things ahead that keep well in the freezer.  Yesterday afternoon was a marathon session in the kitchen, with Papa cooking the meat and then I pulled it together with various other ingredients to churn out oversize casseroles of Rigatoni Bolognese and Lasagne.  I also put together Party Pizzas from a recipe I haven't used in years.  What's great about them is that they can be flash frozen, then pulled out when you're ready to bake, in the quantity you want. 

Party Pizzas
1 pound ground beef
1 pound mild sausage
1 pound light velveeta
8 English muffins
salt and pepper
Italian herbs
Parmesan

Brown ground beef and sausage, then drain all fat.  Combine cheese with meat and melt.  Sprinkle with seasoning to taste.  Spread mixture on lightly buttered English muffins and place on cookie sheet.  Either freeze or bake right away.  If freezing, place cookie sheet in freezer about 20 minutes, then remove pizzas to plastic bag and put bag in freezer until ready to use.  If baking, sprinkle tops with Parmesan and bake in 350 oven until bubbly.  They are yummy!
